Banana oat pancakes

Ingredients

  • 1 large ripe banana

  • 1/2 cup plain yoghurt

  • 1 egg

  • 1 C rolled oats

  • 1 Tbsp maple syrup or honey (with a wee bit more to drizzle on top if desired)

  • 1 tsp cinnamon

  • 1 tsp Vanilla essence

  • 1/2 tsp baking powder

  • Butter to grease pan

  • Berries or fruit of your choice to serve (optional)

Directions

YUM these pancakes are so quick and easy, plus a healthier version compared to flour pancakes.

Simply put all ingredients into a blender and blend until smooth. Head a pan over medium heat with a little butter, and tip desired amount (don’t make them too big, small thin ones are best) into the pan. Once they start to bubble, flip over. Serve with fruit of your choice, maybe another blob of yoghurt and a drizzle of maple syrup. Makes approx 10 mini pancakes (double the mixture if you’re cooking for the family).
