Carrot cake in a mug
Ingredients
1 1/2 Tbsp coconut oil
1 Tbsp coconut flour
2 Tbsp almond flour
1/4 tsp baking soda
1/2 tsp cinnamon
2 Tbsp orange juice
1/4 tsp vanilla extract
1 egg
2 tsp liquid honey
1/4 cup grated carrot
1 Tbsp raisins
1 Tbsp chopped pecans or walnuts
Your choice of yoghurt for the top
Directions
Melt coconut oil in mug. Add coconut flour, almond flour, baking soda, cinnamon and stir. Next, add orange juice, vanilla extract, egg, honey and carrot, mix well. Stir through raisins and nuts.
Microwave for 2 1/2 - 3mins or until the cake has risen and the top is fully cooked. Serve with a blob of your favourite yoghurt. A healthier Easter treat ready in minutes.
