Carrot cake overnight oats

Ingredients

  • 1 medium carrot, grated

  • 1/2 C rolled oats

  • 1/2 C plain yoghurt

  • 1/4 C milk of your choice

  • 1 tsp pure maple syrup

  • 1/2 tsp cinnamon

  • 2 Tbsp shredded coconut

  • 1 Tbsp raisins

  • Toppings: 1 Tbsp walnuts and 1 Tbsp raisins, and a dash more milk if needed.

Directions

Mix together all the ingredients into a jar or a bowl and leave in the fridge over night.  Before serving add the few toppings.  A delicious healthy breakfast.
