Carrot slaw

A delicious carrot style slaw with roasted cashews and dates, mixed together with a vibrant Indian inspired dressing. Healthy and vegetarian, this recipe is so easy to make and can be made ahead of time.

Ingredients

  • 4 C of carrot, grated

  • 1 Tbsp orange zest

  • 1 garlic clove, crushed

  • 1 tsp fresh ginger, zested

  • 1/3 C dates, chopped

  • 1/2 C cashews or almonds or walnuts, roasted

  • 1 red onion, finely diced

  • 1/2 C coriander or parsley, chopped

Dressing ingredients

  • 1/4 C olive oil

  • 3 Tbsp apple cider vinegar

  • 2 Tbsp honey

  • 1/2 tsp salt

  • Pepper to taste

  • 1/2 tsp turmeric

  • 1 tsp curry powder

  • Pinch of cayenne pepper

Directions

If your nuts are raw, roast them at 180C for around 6-8mins. Set aside to cool. Place all of the carrot slaw ingredients in a bowl and toss well. Combine dressing ingredients in a jar and shake until well combined. Add to the slaw with cooled nuts and mix really well. Serves 4-6

Tip:

You could also add finely chopped greens such as kale, silver beat or spinach to make this a one-stop-shop vegetable side dish. Will keep in the fridge for approximately 4 days.
