Cauliflower bread

Ingredients

  • 2 C almond meal

  • 1/4 C psyllium husk

  • 1/2 tsp salt

  • 1/2 tsp baking soda

  • 1 C cauliflower rice (about 1/4 of a large cauli, blitzed into rice size chunks in the food processor (or grated)

  • 5 eggs, beaten

  • For decoration: 1 Tbsp pumpkin seeds, 1 Tbsp sunflower seeds

    Directions

Preheat oven to 180 deg.  Line a loaf tin with baking paper, set aside. In a large bowl mix almond meal, psyllium husk, salt & baking soda.  Fold in the eggs and cauliflower and mix until the batter is smooth.  Pour into loaf tin, smooth down evenly with spatula.      Decorate with seeds.  Bake for approx 45 minus or until browned on top.  Remove and allow to cool before slicing.  Lovely fresh or toasted with some butter, dunked in soup!
