Crispy chicken tenders

Ingredients

  • 500 g chicken tenders

  • 1 C ground almonds

  • 1/2 C desiccated coconut

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 2 eggs

    For the sweet mustard dipping sauce

  • 3 Tbsp wholegrain mustard

  • 1 1/2 Tbsp runny honey

  • 1 Tbsp mayonnaise

  • 1 Tbsp lemon juice


Directions

Heat oven to 180C and line a roasting tray with baking paper. Add two eggs to a small shallow bowl and whisk. In another bowl add the ground almonds, coconut, garlic powder and paprika and mix together.

Dip the chicken tenders into the egg mixture and then the almonds and coconut mixture. Place onto the baking tray and cook for 20-25mins or until cooked right through.

To make the dressing add all the ingredients into a small bowl and mix together.

Pair with a fresh salad for quick, easy & delicious dinner! Serves 4.
