Double Choc Cookies

Ingredients

  • 1 C almond meal

  • 1/2 C good quality dark cocoa

  • 1/4 tsp baking soda

  • Pinch of salt

  • 1 egg

  • 1/2 tsp vanilla extract

  • 1/4 C coconut oil

  • 2 Tbsp honey

  • 12 pieces Whittakers dark 72% ghana chocolate

Directions

Pre heat oven to 180 degrees. Add dry ingredients to a bowl, whisk to combine, smash out any lumps. Add all the wet ingredients and carefully mix to combine. If the mixture is a bit wet, add a bit more almond meal. Add in the chocolate chunks. Spoon mixture onto a lined baking tray, push mixture down with a fork. Bake for approx 12 mins or until the edges start to firm up. Turn the oven off, leave the door ajar and keep the cookies in for another 10 mins or to cool down. This will help them crisp up!
