Energy muesli bar

Ingredients

  • 1/2 C peanut butter (I used crunchy)

  • 1/2 C honey

  • 1/2 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 1 C rolled oats

  • 1 C corn flakes

  • 1/4 C desiccated coconut

  • 2 Tbsp chia seeds

  • 1/4 C pumpkin seeds

  • 6 squares dark ghana 72% cocoa chocolate

     

Directions

In a large bowl mix together the peanut butter, honey, vanilla extract and cinnamon (melt slightly if needed) until smooth. Add all other ingredients except the chocolate and mix together well. Line a loaf tin with baking paper and press mixture down firmly into the tin. Melt the chocolate and drizzle on the top. Pop into the freezer to set for 30 minutes and then chop up. I keep this in a container in the fridge. Makes approx 20 pieces. Enjoy!
