Luscious lemon slice

When lemons are in abundance this is your go to recipe. Super lemony with texture and nutritious ingredients galore!


Ingredients

Base ingredients

  • Zest of 2 lemons

  • 1/2 C desiccated coconut

  • 1/2 C wholegrain oats

  • 1/4 C sunflower seeds

  • 10 dates

  • 1/2 tsp salt

  • 1 Tbsp coconut oil, melted

Lemon cream ingredients

  • Zest of two lemons

  • 1/3-1/2 C lemon juice

  • 1 Tbsp coconut oil, melted

  • 3/4 C raw cashews

  • 3/4 C desiccated coconut

  • 2-3Tbsp coconut sugar/honey/sugar free maple syrup

Directions

In two separate bowls cover the dates and cashew nuts with boiling water. Set aside.

Put the base ingredients in a food processor (adding the drained dates last) and blitz until well combined. If you can pinch the mixture together with your fingers and it holds it’s shape it is ready. Firmly pack and spread the mixture into a greased slice tin about 18cm squared or a rectangle with a similar surface area. Smooth it out with the back of a wet spoon and set aside.

Place all of the lemon cream ingredients (including the drained cashews) into the food processor and blitz until thick and smooth. You may need to add a little more lemon juice to get a nice smooth consistency. Spread evenly on top of the base.

Place the slice in the freezer for 2-3 hours. Cut into squares and enjoy. This slice needs to be stored in the freezer. It is best eaten after it has been out of the freezer for approximately 10 mins.
