Pineapple & Coconut Muffins

Ingredients

  • 1 C Hard coconut oil

  • 1 C Coconut sugar

  • 4 Free range eggs

  • 2 C Wholemeal self raising flour

  • 2 C Chopped pineapple (fresh or tinned)

  • 1 C Coconut cream

  • 4 Tbsp Pineapple juice

Directions

Preheat oven to 180 degrees. Line muffin tray with cases.

Cream chilled coconut oil and coconut sugar with electric beaters in a mixing bowl. Add one egg at a time.

Add flour, then stir in coconut cream, pineapple pieces and juice.

Divide evenly into the cases, bake for approx. 20 minutes or until a skewer comes out clean.  Makes 12.
