Raspberry chia jam

Ingredients

  • 2 C raspberries (if they’re frozen then thaw them, or use fresh)

  • 3 Tbsp chia seeds

  • 2 Tbsp honey

  • 1/2 tsp vanilla essence

Directions

Put all ingredients into a pot, boil over medium heat making sure to stir frequently for a few minutes. The raspberries will break down and the mixture will thicken up as the chia seeds absorb the liquid. Tip into a clean jar and place into the fridge where it will thicken more. Use it on toast as jam, as a healthier jam on a scone or drizzle over pancakes with yoghurt for a yummy treat breakfast. Keep in the fridge, it should last for a few weeks.
