Thai chicken meatballs

Ingredients

  • 500g chicken mince

  • 1 Tbsp oyster sauce

  • 1 Tbsp soy sauce

  • 1 tsp grated ginger

  • 2 Tbsp coriander chopped (or dried is fine)

  • 1 tsp chilli finely chopped (optional)

  • 1/4 C bread crumbs

  • 1 Tbsp sesame oil

  • 1/2 C sesame seeds

  • Vegetables for on the side—I chose kumara, broccoli and green beans.

Directions

Preheat oven to 200 degrees and line a tray with baking paper. Place mince, oyster sauce, soy, ginger, coriander, chilli and bread crumbs into a large bowl and combine with your hands (keeping your hands a bit wet helps the mixture to not stick to you). Roll into golf ball sized balls and then roll each into sesame seeds, and place onto the tray. This will make approx 20 meatballs. Drizzle with sesame oil and cook for 5 mins, take out and turn over and cook for another 5 minutes. While your meatballs are cooking, prepare and cook your chosen side vegetables. The meatballs are delicious and a family favourite in our house now!
