Baked blueberry and banana oats

Ingredients

  • 2 large bananas, sliced

  • 2 C rolled oats

  • 2 C milk of your choice

  • 2 eggs

  • 2 Tbsp honey

  • 1 tsp vanilla

  • Good pinch of cinnamon

  • 1 C frozen blueberries

  • Optional—blob of your choice of yoghurt on the side. I added Raglan Coconut Yoghurt blueberry flavour

Directions

Preheat your oven to 180 degrees. In a greased baking dish, line the bottom of the dish with pieces of banana so it covers the bottom. Add oats on top of the banana. In a separate bowl whisk together milk, eggs, honey (you may need to melt this so it mixes in), vanilla, cinnamon. Pour over the top, then scatter the cup of blueberries over the top. Pop into the oven for approx. 30 minutes. Serve with a blob of yoghurt, or if you are heading out to work on the run, chop it up and take a piece with you. A simple, warm and filling breakfast. YUM! Serves 6.
