Warm roast cauliflower salad

Ingredients

  • Whole cauliflower chopped up into florets

  • 2 Tbsp olive oil

  • 1 red onion, thinly sliced

  • 3 Tbsp raisins

  • 3 handfuls of baby spinach

  • 1/4 C roasted almonds, chopped

  • Salt & pepper

    For the dressing:

  • 2 Tbsp olive oil, 2 Tbsp balsamic vinegar, 1 Tbsp runny honey, salt & pepper

Directions

Pre heat your oven to 180 degrees. Toss your cauliflower in the olive oil, salt & pepper, spread on a lined baking tray and roast for approx 30 mins or until golden. Add the sliced up onion to the baking try for the last 10 mins. Meanwhile in a bowl add spinach, raisins and almonds. Mix salad dressing ingredients in a jar and shake. And half of it to the greens mix, then once the cauliflower and onion is ready add those in too and mix well. Place on a serving plate, drizzle the last of the dressing over the top to serve.

A quick and easy salad that will warm you up on a cold winters day.
