Banana and Chia Loaf

Ingredients

  • 3 ripe bananas

  • 1/4 C melted coconut oil

  • 4 eggs

  • 3/4 C coconut flour

  • 1/4 C chia seeds

  • 1/2 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Directions

Preheat oven to 160 degrees.

Place banana, melted coconut oil and eggs in a food processor and blend until smooth.

In a separate bowl, mix the coconut flour, salt, vanilla, baking soda and chia seeds. Add the banana mixture to the dry ingredients, mix well.

Place in a loaf tin (I sprinkled a little extra coconut on the top before it went in the oven to make it look pretty!), and bake for 35-45 minutes. Check it is cooked by inserting a metal skewer. Leave to cool before slicing.
