Beef, Quinoa & Kale Patties

Ingredients

  • 400g lean beef mince

  • 1 egg, beaten

  • 1 small onion, finely diced

  • 1 small carrot, grated

  • 2 C finely chopped kale

  • 1⁄2 C quinoa

  • 1 tsp ground paprika

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1⁄2 tsp chilli flakes (optional)

  • 1⁄2 cup buckwheat flour for binding

  • Salt and pepper

Directions

Rinse the quinoa under cold running water to remove its bitter flavour. Tip into a pot and add double the amount of salted water. Place over a medium heat and bring to the boil. Reduce to a simmer for 10 to 15 minutes, or until tender.

Put the mince into a bowl and then add the quinoa, egg, carrot, kale, onion, spices, salt and pepper - mix together well. Sprinkle in flour little by little, just enough to bind it all together. Form into patties the size of your palm (makes about 12). Heat a non-stick fry pan, add a small amount of oil if needed and cook until cooked through. 

These are a all-in-one meal, great to put in the freezer for a quick dinner, serve with salad or veggies.
