Better Butter Chicken

Ingredients

  • 800g chicken breast, chopped into bite size pieces

  • 6 Tbsp coconut oil

  • 1 x 400ml can coconut cream

  • 1 x 400g can chopped tomatoes

  • 3 Tbsp tomato paste

  • 2 Tbsp lemon juice

  • 1 large onion, diced

  • 4 garlic cloves, crushed

  • 2 tsp garam masala

  • 1 tsp ground cardamom

  • 1 tsp ground coriander

  • 1 tsp ground ginger

  • 1⁄2 tsp smoked paprika

  • Pinch of cayenne pepper (optional)

  • 1 tsp ground turmeric

  • 1 tsp salt

Directions

Heat 4 Tbsp of coconut oil in a large pan over medium heat, add onion and sauté for a few minutes.

Turn down the heat, add in tomato paste, garlic and all the spices, cook for one minute. Then add in the lemon juice, salt, remainder of the coconut oil and coconut cream and stir well.

Turn up the heat, bring sauce to a simmer. (Split spare sauce into another container if you want to freeze some). Add the chicken and stir to coat in the sauce. Continue to cook until the chicken is cooked through and the sauce has thickened.

I served with brown rice and broccoli on the side.
