Banana peanut butter baked oaty slice

Ingredients

  • 3 large bananas, mashed

  • 2 C rolled oats

  • 1 C smooth peanut butter

  • 1 egg

  • 1/4 C coconut sugar OR maple syrup

  • 1 tsp vanilla

  • 1 tsp cinammon

  • 1 tsp baking powder

  • Good pinch of salt

  • 1/2 C dark chocolate chips

Directions

Preheat your oven to 180 degrees. Line a baking dish with baking paper. In a bowl mix together the oats, bananas, peanut butter, vanilla, egg, cinnamon, baking powder, salt and your choice of sweetener. Once it’s mixed together, add in the chocolate chips last and mix them in. Save a few to scatter on the top before baking if you wish. Tip the mixture into the baking dish, smooth out with a spatula and bake for approx. 25 mins. Let cool then chop up into slices. This won’t go crunchy, but more of a soft, chewy texture. It’s a peanut butter and banana fans dream combo! Perfect for farming ladies on farm and busy, a much healthier option than a store bought muesli bar. Makes 12 decent sized pieces. Also yummy served warm with a blob of yoghurt. Enjoy!
