Brown rice, tuna and celery salad

Ingredients

  • 2 C cooked brown rice (or one full packet of Uncle Ben’s 250g microwaveable packet brown/wild rice)

  • 425g tinned tuna in oil

  • 2 celery stalks, finely diced

  • 3 Tbsp soy sauce

  • 1/2 lemon, juice & zest

  • Large handful chopped fresh parsley

     

Directions

Toss together in a bowl the rice, celery, soy sauce and parsley. Drain the tuna, keeping the oil, then mix the oil with the lemon juice & zest. Tip the tuna into the other ingredients, stir through, then add the lemon dressing. A quick easy nutritious lunch! Serves 2.
