Oaty coconut cookies

Ingredients

  • 1 1/4 C rolled oats

  • 2 mashed bananas

  • 1/2 C desiccated coconut

  • 1 tsp cinnamon

  • 2 tsp chia seeds

  • 1/2 C dates (soaked in warm water to soften up)

Directions

Drain the warm water off the dates and chop up into pieces. Mix all of the ingredients in a bowl. Roll the mixture into balls and then place onto a tray lined with baking paper, push the balls down with a fork to flatten the biscuits. Bake at 180 degrees for about 12 minutes or until brown. These biscuits won’t go super crunchy being sugar free, but they are delicious. My kids loved them too. Makes approx 10. Enjoy.
