Carrot Beetroot & Spinach Omelette

Ingredients

  • 1 small beetroot grated

  • 1 carrot grated

  • 2 big handfuls spinach

  • 2 eggs whisked (3 if you’re hungry!)

  • Salt and pepper to season

  • 1/2 avocado, cherry tomatoes, crumbled feta for on the side

  • A bit of oil for the pan

Directions

Heat oil in the pan and stir fry the carrot, beetroot and spinach until soft. Season with salt and pepper. Add the eggs, mix it all together and push it into an omelette/fritter shape. Cook for about a minute, until the egg is cooked, then flip to brown the other side. Serve with the avocado, cherry tomatoes & crumbled feta on the side. Delicious for breakfast or lunch!
