Cauliflower & red onion bake

Ingredients

  • 1 small head of cauliflower (or half a large one)

  • 3 Tbsp olive oil

  • 1 tsp ground cumin

  • 1 tsp ground paprika

  • 1/2 tsp ground coriander

  • 1/4 tsp cayenne pepper

  • 6 eggs

  • 1/2 C cream

  • 1/2 C grated parmesan cheese and 1/2 C grated tasty cheddar cheese

  • 1 red onion sliced into thin rings

  • 1 C cooked Uncle Ben’s brown rice & quinoa mix 

Directions

Preheat oven to 200 degrees. Grease approx 20 x 25cm baking dish. Chop cauliflower into florets and arrange in the roasting dish. Drizzle with oil, season with salt, cumin, paprika, coriander and cayenne and bake for 15 mins until the cauliflower starts to colour and cook. In a bowl, whisk the eggs, mix cream and cheeses together. Give the cauliflower a stir around, add onion and scatter over the rice. Pour over the egg & cheese mixture. Bake for a further 20 mins or until the egg is cooked. Serve with a green salad.
