Chicken herb meatballs with tomato sauce

Ingredients

  • 500g chicken mince

  • 1 small onion, finely chopped

  • 1/2 C wholemeal breadcrumbs

  • 2 Tbsp chopped fresh parsley

  • 1/4 C finely grated parmesan cheese

  • 1 egg

  • Salt & pepper

  • Tomato sauce: 1 garlic clove, 1/2 tsp dried oregano, 1 x 400g can tomatoes, 1 tsp tomato paste.

     

Directions

Combine chicken mince, onion, breadcrumbs, parsley, parmesan, egg, salt & pepper and mix in a bowl. With wet hands roll into small balls (add a few more breadcrumbs if mixture is too wet. Heat a dash of oil in a frying pan, add the meatballs and cook, turning until golden brown. Meanwhile for the sauce, in a pot heat oil and add garlic, cook for a few minutes. Then add tomatoes, tomato paste and oregano, salt & pepper if desired and simmer for 10 mins until it thickens. Serve meatballs with some tomato sauce on top, I served with brown rice and a side salad. Makes approx 15 meatballs. Enjoy!
