Coconut and apricot oats

Ingredients

  • 1 C rolled oats

  • 3 Tbsp dessicated coconut

  • 1/2 tsp cinnamon

  • Pinch of salt

  • 2 C coconut milk (I used Little Island from Countdown)

  • For the toppings: A few dried apricots, chopped up, coconut flakes, drizzle of maple syrup (or honey). I added a few slices of banana, you could add whatever fruit you had.

Directions

Add the rolled oats, dessicated coconut, cinnamon, salt and 1 C of coconut milk to a saucepan over medium heat. Stir, and as the oats start to cook and the milk gets absorbed, add in more milk as needed. Split between two bowls, add your toppings and a bit of extra milk if you need. A yummy filling breakfast, enjoy! Serves 2.
