Courgette & bacon slice

Ingredients

  • 6 free range eggs

  • 4 medium courgettes, grated (and patted dry to take a wee bit of the moisture out)

  • 1 onion, diced

  • 250g bacon, diced

  • 3/4 C flour (I used half tapioca and half rice flour)

  • 1/4 C coconut oil, melted

  • 1/2 tsp salt

Directions

Pre heat the oven to 180 degrees. In a large bowl whisk eggs, add salt, then add the grated courgette, onion, bacon, flour and coconut oil. Mix well. Pour mixture into a baking dish and bake for approx 40 mins or until egg is cooked and it starts going golden. Delicious with a green salad for lunch or dinner. Serves 4.
