Roasted red capsicum hummus

Ingredients

  • 1 large red capsicum, de-seeded and cut into pieces to roast

  • 1/2 tin chickpeas, drained and rinsed

  • 1 Tbsp olive oil

  • 1 Tbsp tahini (I used Ceres organic unhulled)

  • 1/4 tsp cumin

  • 1/2 tsp paprika

  • Juice of 1/2 lemon

  • Good crack of salt & pepper to season

Directions

Pre heat the oven to 180 degrees. Roast the capsicum pieces for approx 30 mins or until soft. Place the rest of the ingredients into a blender, add the capsicum once it’s cooked and cooled, and blend until smooth. I served my hummus with carrot sticks for a healthy snack. Easy and delicious!
