Curried mayo chicken salad

Ingredients

  • About 1 C ripped up cooked chicken (I used leftover roast chicken from the night before)

  • 3 cm chunk cucumber, diced

  • 6 red grapes, halved

  • 1/2 red capsicum, diced

  • 1 celery stalk, diced

  • 2 C salad greens

  • 1/4 C Greek yoghurt (I used Raglan Coconut Greek flavour)

  • 1 tsp curry powder (to your taste)

  • Dash of cayenne pepper

  • Salt & Pepper

Directions

Mix together in a bowl yoghurt, curry powder and cayenne. Add in chicken, cucumber, grapes, celery, salt & pepper and fold all together. Place the salad greens in a bowl and tip the chicken mixture on top.

Serves 1.
