Easy crunchy protein slice

This is an awesome little slice to have up your sleeve. Take a little piece in your car for after a workout, use it as your afternoon pic me up or make it as a nutritious gift for a friend instead of sugar loaded baking.

Ingredients

  • 1/2 C peanut butter

  • 1 Tbsp coconut oil

  • 2-3 Tbsp honey

  • 1 tsp vanilla essence

  • 1/2 C protein powder or ground almonds

  • 1/2 C wholegrain oats

  • 1/2 C raw buckwheat

  • 1/3 C desiccated coconut

  • Pinch of salt

Directions

Combine everything in a saucepan. Stir until the coconut oil, honey and peanut butter have melted and the dry ingredients are well combined. Spoon into a lined loaf tin and refrigerate for a couple of hours. Once set firm cut into bars and store in the fridge or freezer.

Tip - One piece is enough!!
