Feijoa Chia Seed Delight

Ingredients

  • 200g feijoa flesh - about 6-8 decent sized feijoas

  • 1/4 cup water

  • 1/4 cup chia seeds

  • 1 Tbsp honey

  • 1 tsp vanilla essence

  • 1 Tbsp LSA (ground linseed, sunflower seeds & almonds)

  • 1 Tbsp of coconut flour

  • 1 1/2 C milk - dairy, almond, coconut any kind will do

  • Pinch of salt

  • Fresh fruit, nuts and seeds to decorate


Directions

The night before add feijoa flesh, water and honey to a medium pot. Bring to the boil and simmer covered for 8-10mins. Take off the heat and mash feijoas well. Add all of the remaining ingredients and stir to combine. Transfer to a bowl, cover and place in the fridge over night or for approx. 6-8 hours.

Porridge - heat until warmed through on the stove or in the microwave, decorate with your favourite toppings.

Pudding - Serve in a small bowl with your favourite toppings.

Top tips: Called Chia Seed Delight because it can be eaten cold as a Chia Seed Pudding or warm as Chia Seed Porridge. What could be more delightful than pudding for breakfast! Soaked chia seeds can be refrigerated for up to 5 days, make a big batch to last longer.
