Get up and go feijoa loaf

Ingredients

  • 1/4 C dates

  • 3 eggs

  • 1 1/2 C scooped feijoa flesh - 5-6 whole

  • 1 C desiccated coconut

  • 1 C almond meal

  • 1/2 C gluten free flour or coconut flour

  • 1/3 C unsweetened yoghurt

  • 100g melted butter or coconut oil

  • 1 tsp vanilla essence

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • Pinch of salt


Directions

In a small bowl cover dates with boiling water, set aside. Heat oven to 180C and grease and line a loaf tin. Combine all ingredients (adding drained dates last) in a food processor until smooth. Pour the mixture into a lined loaf tin and bake for 35-40 mins or until the top is golden and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5-10 mins. Eat immediately or a slice at a time from the fridge, enjoy!
