French style slaw

Fresh and crunchy, this slaw will be a great side dish to many meals. A hint of citrus and mustard give the creamy dressing a French twist, plus it’s healthier than your average slaw as the traditional mayonnaise has been replaced with yoghurt.

Ingredients

  • 3 C crunchy raw greens finely sliced - green cabbage, red cabbage, bok choi (aka pak choi), spinach, kale, celery etc...

  • 1 large granny smith apple skin on, cut into match sticks

  • 1/2 a red onion or 2 spring onions, finely sliced

  • Handful of parsley, chopped

  • 2 Tbsp toasted sunflower seeds

    Creamy dressing ingredients

  • 2 tsp olive oil

  • 2 tsp white wine vinegar

  • 2 tsp wholegrain mustard

  • 3 Tbsp Greek yoghurt

  • 2 Tbsp orange juice

  • Salt and pepper to taste

Directions

To toast the sunflower seeds roast them at 180 C for 5-8 minutes. In a large bowl combine all vegetables, apple, onion and parsley. Using a jar or bullet, shake or blitz the creamy dressing ingredients until smooth and creamy. When ready to serve add to the bowl with the toasted sunflower seeds and mix well.
