Festive rocket, strawberry & feta salad

Ingredients

  • 100 g bag of rocket

  • 250g fresh strawberries, rinsed and quartered

  • 70g approx of feta, crumbled

  • 3 Tbsp sunflower seeds

  • Balsamic dressing drizzled over the top

    Dressing ingredients:

  • 1/2 C extra virgin olive oil

  • 2 Tbsp balsamic vinegar

  • 1 tsp honey or maple syrup

  • Juice of 1 lemon

  • 1 tsp Dijon mustard

  • Salt & pepper

Directions

To make the dressing: Combine all the ingredients in a jar and shake. This will make too much than you need for the salad, but it keeps in the fridge for about a week so you can use it again

For the salad: In a salad bowl or platter, lay out the rocket and drizzle maybe quarter of the salad dressing over the rocket. Add in the strawberries, toss through. Sprinkle over the seeds, then crumble over the feta. Drizzle a wee bit more dressing if desired. Serve immediately.
