Fresh potato salad

Ingredients

  • 1 kg (approx.) new potatoes (I left the skins on)

  • 2 Tbsp good quality mayonnaise (I used Best Foods Mayo)

  • 3 Tbsp natural yoghurt

  • 3 Tbsp crème fraiche

  • 1 tsp Dijon mustard

  • 6 spring onions, ends trimmed up and sliced OR if you don’t have spring onions, finely chop up 2 shallots

  • 3 Tbsp chives (I put two tablespoons through the salad and sprinkled last one on top

  • Salt & Pepper


Directions

Cut the potatoes into 3cm chunks and boil in a pot of water, cooking until just about cooked through (don’t over cook or they’ll break and lose their shape). Tip into a colander and drain well. While potatoes are cooking, mix together mayo, yoghurt, crème fraiche, and mustard. Add in the spring onions (or shallots), most of the chives and a good crack of salt and pepper. Put the potatoes in a bowl and then tip in the dressing mixture, stir it through being careful to not break the potatoes. Tip into your serving bowl and then add the remaining chives to the top. Quick, easy and much better for you than a pre made jar of potato salad dressing full of numbers and nasties.

Extra—You could add diced up cooked bacon bits to this too, I chose to do this recipe without bacon but I know lots like potato salad with bacon in it too.
