Greek salad

Ingredients

  • 1/4 C extra virgin olive oil

  • 3 Tbsp red wine vinegar

  • 1 clove garlic, minced

  • 1/4 tsp dried oregano

  • 1/4 tsp Dijon mustard

  • Half long telegraph cucumber, chopped into small pieces

  • 1 green capsicum, chopped into small chunks

  • 2 C cherry tomatoes, halved

  • 1/3 block feta cheese, cut into 1cm squares

  • 1 red onion, thinly sliced

  • 1/3 C Kalamata pitted olives

  • 1/3 C fresh mint leaves

  • Salt & pepper

Directions

Make the dressing in a small bowl from the first ingredients—olive oil, red wine vinegar, garlic, oregano and mustard. Grind a bit of salt & pepper to taste.

On a large platter arrange the salad ingredients. Drizzle the dressing and very gently mix together so you don’t break the cheese. Sprinkle with a few mint leaves on the top, and salt and pepper .
