Yoghurt and cucumber dip (Tzatziki)

Ingredients

  • 500g Greek style yoghurt or plain yoghurt

  • 1 Lebanese cucumber, peeled and grated coarsely

  • 1/2 tsp salt

  • 1 clove garlic, crushed

  • 1 Tbsp lemon juice

  • 1 1/2 Tbsp shredded fresh mint leaves (with a couple to garnish on top)

  • Salt & pepper cracked on the top

Directions

Combine the cucumber and salt in a bowl, then tip onto paper towels and pat with a few extra to remove the excess liquid. Add back into the bowl, along with all the other ingredients. Mix together. Tip into a small serving bowl, crack salt and pepper on the top and garnish with mint.

This is a fresh dip delicious with a Greek salad and lamb or chicken. Or you could fill pita pockets with meat, salad and this dip on the top for a quick and easy dinner.
