Home made easy pasta sauce

Ingredients

  • 2 Tbsp olive oil

  • 1 medium onion finely diced

  • 3 cloves garlic minced

  • 2 tsp dried basil

  • red pepper flakes about 1/4 tsp (optional)

  • 1/2 tsp salt

  • 1/2 tsp sugar

  • 1 can crushed tomatoes

  • 1/4 cup water

Directions

Heat oil over a high heat. Saute the onions, once softened add the garlic and stir to combine so garlic doesn’t burn. Add basil, red pepper flakes, salt, wee bit of sugar, stir. Dash more oil if you need it. Add can crushed tomatoes. Reduce to a low heat, and add water. The sauce will thicken, add a wee bit more water if you need. This sauce only requires about 10 mins of simmering. For a deeper flavour, you can cook longer. The longer you cook it for, the thicker it will get, so add a bit more water if needed. You could stir in additional herbs too if you wanted to, like oregano or extra salt & pepper. Enjoy! Sarah x

Tips: This recipe uses canned tomatoes, but if you had an abundance of fresh tomatoes you could use those too, and blitz the sauce in a blender to make it a thinner consistency if you wished. The flavours will be the same. I know buying a jar is way easier, but trust me that when you eat a home made sauce, it’s so much more satisfying!  This sauce will freeze well, so double or triple the ingredients if you want to freeze it after it’s cooled for another meal.
