Spinach and salmon easy frittata

Ingredients

  • 4 big handfuls of spinach (or approx. 2 cups of cooked spinach)

  • 1 clove garlic, crushed

  • 8 eggs

  • 1/2 C cream

  • 1/4 tsp nutmeg

  • 1/2 C basil leaves, chopped (a few to garnish the top too if you like)

  • 1 C grated cheese (I used tasty)

  • 100g cold smoked salmon

  • Salt & pepper

Directions

Pre heat the oven to 180 degrees. Grease a baking dish, so the egg comes out easily once cooked. If the spinach is pre cooked, squeeze out any excess liquid. If it’s uncooked, add it to a pan with the garlic and cook it down. Whisk the eggs, cream, nutmeg, salt & pepper in a bowl. Fold in the spinach, basil, cheese and combine. Tip mixture into your baking dish. Add the salmon on the top, so you can still see it when it bakes. Cook for approx. 20 mins or until egg is cooked through. A quick and easy lunch, serve with a green salad on the side. Great for leftovers the next day too. Yum!
