Mashed egg, avocado and tomato crackers

Ingredients

  • 2 hard boiled eggs, peeled

  • 1 tsp mayo (I used Best Foods)

  • Good dash curry powder (optional)

  • Salt & Pepper

  • 1/2 ripe avocado, mashed

  • Sliced tomato

  • Good quality seed crackers of your choice


Directions

I often get asked for healthy lunch ideas, with many ladies finding lunch the hardest meal to find something quick, easy and healthy to eat.

In a bowl, mash the eggs, mayo, curry powder, salt & pepper together and mix well. Spread the egg on top of your crackers, then top with some mashed avocado and sliced up tomato. This is an easy lunch to take to work with you for ladies who work in an office. Make the egg before you go to work, pop it into a container and then take the avocado and tomato with you so you can chop them up fresh just before you eat.

The protein from the eggs and good fat in the avocado will help to keep you full all afternoon. Enjoy!
