Banana oat blender muffins

Ingredients

  • 1 3/4 rolled oats

  • 2 large bananas, mashed

  • 2 eggs

  • 1/2 C plain yoghurt

  • 1/4 C maple syrup or honey

  • 1 Tbsp peanut butter

  • 1/2 tsp baking soda

  • 1 tsp cinnamon



Directions

Preheat the oven to 180 degrees. Prep muffin tin with 12 muffin cases ready to go. Into a blender add the oats and pulse those first so they’re more like flour. Then add in all the other ingredients. Blitz until smooth and well mixed together. Poor the batter into the muffin cases (fill about 3/4 up) and then bake for approx 12 to 15 mins. Serve warm with a bit of butter, YUM!
