Mediterranean tray bake

Cooking with in season vegetables is such a joy. The natural flavours and vibrant colours will make this simple one dish meal a summer time favourite!


Ingredients

  • 8-10 chicken drumsticks

  • 2 large red onions, cut into wedges

  • 3 large capsicums, cut into wedges

  • 8 garlic cloves, peeled and halved

  • 1 C of cherry tomatoes, whole

  • 1 C black pitted olives, whole

  • 3-4 Tbsp olive oil

  • 1 tsp dried oregano or 2 tsp fresh

  • Salt and pepper to taste

Directions

Heat oven to 180C. Arrange the red onions, capsicums and garlic cloves on the base of your biggest roasting dish. Drizzle with olive oil and season well with salt and pepper. Toss with your hands to ensure everything is well coated. Arrange the chicken drumsticks on top of the vegetables. Drizzle the meat with a little bit more olive oil and season with extra salt and pepper and the oregano.

Bake uncovered in the oven for 20-25mins or until the chicken is almost cooked through and the skin in slightly golden. Remove from the oven, throw in the cherry tomatoes and olives and return to the oven for another 6-8mins or until the tomatoes have just started to soften and caramalise. Serve garnished with fresh basil leaves if you have them and a green salad.
