Indulgent overnight oats

Ingredients

Oat layer

  • 1/2 C wholegrain oats

  • 1 Tbsp chia seeds

  • 1 Tbsp peanut butter

  • 1 Tbsp maple syrup or honey

  • 1 C milk

  • 1 Tbsp yoghurt

Berry layer

  • 1/4 C dethawed berries

  • 1 Tbsp chia seeds

Chocolate layer

  • 2 Tbsp chia seeds

  • 1 Tbsp maple syrup or honey

  • 1 Tbsp cacao powder

  • 1/2 C milk

Directions

Gluten free - Replace the oats with buckwheat or 3Tbsp of chia seeds

Dairy free - Use a plant based milk and coconut yoghurt

In 3 medium bowls combine the ingredients for each layer separately and place them in the fridge over night. Just before serving, stir well then divide each layer into 2 glass jars or cups. Berries first then chocolate followed by the oats. Drizzle with peanut butter and sprinkle with cocoa nibs or chopped nuts.
