Banana berry buckwheat porridge

Wheat and gluten intolerant? Love porridge? You need to try this alternative. Buckwheat is gluten free and despite it’s name, it is also wheat free.


Ingredients

  • 1/2 C buckwheat, soaked in water overnight & rinsed well

  • 1 banana, mashed

  • 1/2 C frozen or fresh berries

  • 1/4 C water

  • 1/2 C milk, any kind

  • 1/2 tsp cinnamon

  • Pinch of salt

  • Serves 2-3

Directions

Place all of the ingredients in a sauce pan and cook on medium heat, stirring regularly, for around 10mins or until the buckwheat has fully absorbed the liquid and is the consistency of traditional porridge.

Serve immediately with your choice of toppings. Coconut chips, sliced fresh fruit, nuts, seeds, nut butter and yoghurt, the toppings are the icing on the cake for this meal!
