Plant power cookies

Plant based protein from nuts, seeds and whole grain oats packs a powerful punch in these naturally sweet, chewy and crunchy cookies. The perfect afternoon pick you up!


Ingredients

  • 1 400g can of chickpeas, drained

  • 1/2 C peanut butter

  • 1 Tbsp honey

  • 1 tsp baking powder

  • 2 Tbsp coconut oil, melted

  • 2 Tbsp each of pumpkin, sunflower and sesame seeds

  • 1 Tbsp chia seeds

  • 1/4 C whole almonds

  • 1 Tbsp water

  • 1/2 tsp salt

  • 1 tsp vanilla essence

  • 1 tsp cinnamon

  • 1 C wholegrain oats

  • 1/2 C dried cranberries

  • 1/4 C cacao nibs or chopped dark chocolate (optional)

Directions

Add all ingredients, except the last 3 to a food processor. Process until well combined.

Scoop out into a bowl, add oats, cranberries and cacao nibs/dark chocolate. Stir until well combined.

Roll out walnut sized balls and flatten with a fork. These will not spread much as they bake so you can fit about 10-12 per tray. Cook for approx 15 minutes, but keep an eye on them (depending on how your oven cooks).

Enjoy them with a cuppa for your afternoon pick me up. Makes approx 16 biscuits.
