Pimped out leftovers

There are two stars in this recipe, the Asian inspired dressing and some humble fridge    leftovers. Follow the basic steps below and leftovers for lunch will become a new fave!


Ingredients

Asian dressing - This will make enough for 6-8 serves

  • 1/4 C soy sauce

  • 1 Tbsp sesame oil

  • 1/4 C white wine (or plain white) vinegar

  • 1/4 C olive oil

  • 1 Tbsp coconut sugar/liquid honey (your choice)

Leftovers in bowl (normal sized cereal bowl)

  • 1/4 of your bowl of carbohydrates - roasties, brown rice, kumara, grated carrot, grated beetroot etc...

  • 1/2 of your bowl of greens & bright coloured vegetables - spinach, kale, lettuce,sprouts, bagged mixes etc. tomato, sweetcorn (think eat the rainbow)

  • 1/4 of your bowl of protein - cooked cold meat, canned fish, eggs, cheese, nuts, seeds.

  • Jazz it up with fresh chopped herbs and a sprinkle of roasted nuts, seeds or some feta.

Directions

To make the dressing place all ingredients in a jar/bullet and shake/blitz well. The dressing will keep in the fridge for a week, give it a good shake before using it each time.

Arrange your leftovers in a bowl and drizzle with 2-4 Tbsp of the Asian dressing.
