One pan mince cheesy pasta

Ingredients

  • 1 Tbsp olive oil

  • 1 small onion, diced

  • 2 gloves garlic, crushed

  • 500g mince

  • 1 can chopped tomatoes

  • 2 C (approx.) beef stock

  • 1/4 C tomato paste

  • 2 Tbsp mixed herbs

  • 1 Tbsp Worcestershire sauce

  • 2 C dried penne pasta

  • 1/2 C cheese

  • Salt & pepper to taste

Directions

This recipe requires a large frying pan with a lid.

Heat the oil in the pan, add onion, garlic and cook for 2 mins. Add mince and brown off. Add tomatoes, paste, half of the stock, herbs, Worcestershire sauce and stir.Reduce the heat to medium/low, add the pasta and stir to combine. Put the lid on for approx 15 minutes, stir once or twice in that time and add the remaining of the stock when you need more liquid. Keep cooking until the pasta is cooked through.Once cooked, sprinkle with the cheese so it melts. You could put your pan under the grill just before serving (if it’s a cast iron pan) to brown off the cheese too. Serve up while hot and enjoy. Only one pan to wash up, easy peasy!
