Popcorn Bars

Ingredients

  • 3 C popped popcorn

  • 1 C rolled oats

  • 1/2 C pumpkin seeds (you could add in whatever seeds you like)

  • 1/2 C chopped up dates (apricots are nice too)

  • 30g butter

  • 1 tsp vanilla extract

  • 1/2 C rice malt syrup

Directions

Mix dry ingredients together, break up the popcorn a bit so it'll bind together better.

Melt butter, vanilla, rice malt in a pot until it boils and thickens up. Tip over dry ingredients, mix, press into a lined tray and wait for it to cool and go hard before chopping up (put it into the fridge, it’ll help set it.  It can be kept in the fridge in a container too so it doesn’t go soft).
