Quick prawn fritters

Ingredients

  • 1/2 C rice flour

  • 1/2 C chickpea flour

  • 1 tsp baking soda

  • Pinch of salt

  • 2 tsps. Smoked paprika

  • 1 small onion, peeled and finely chopped

  • 1 C water (little bit more if you need)

  • 2 C frozen cooked prawns, defrosted and tails removed

  • A little oil for cooking in the pan


Directions

Mix together in a bowl your flours, baking soda, salt and paprika. Stir in the onion and water to form a thin batter. Add a little more water if needed. Add the prawns and combine. Heat your pan (adding a spray of oil so they don’t stick if needed), pour a tablespoon of the mixture into the pan. Repeat until the pan is full leaving gaps between the fritters so you’ve got room to flip. Cook until golden on both sides. Serve with a green side salad. YUM!

* Note—this recipe uses different kinds of flours that you may not have in your cupboard. I bought them from the organic section at Countdown. If you didn’t want to use these flours, you could probably substitute for just normal flour (though I haven’t tried it), I think it’d work fine. Sarah.
