Roasted apricots

This recipe is like summer on a plate and a breeze to whip up. Naturally sweet with honey and a hint of cinnamon it’s simple, nutritious and delicious.

Ingredients

  • 1/2 C natural almonds

  • 1 Tbsp maple syrup

  • 1/2 tsp cinnamon

  • Pinch of nutmeg

  • Pinch of salt

  • 10 fresh apricots, halved and stone out if you can

  • 2 Tbsp liquid honey

  • 1 tsp cinnamon

  • 3-4 Tbsp coconut yoghurt or Greek yoghurt

Directions

Heat the oven to 180C. Line a roasting tray with baking paper, and roast the almonds for 5mins.

Remove from the oven and mix through maple syrup, cinnamon and nutmeg. Return to the oven for 12-15mins. Set aside.

In a bowl toss the halved apricots with the honey and cinnamon until evenly coated. Spread the fruit evenly on a lined roasting dish cut side up and roast for 12-15mins. Remove from the oven.

Roughly chop the almonds and sprinkle on the apricots, drizzle yoghurt on top and serve immediately.

Summer on a plate, enjoy! Serves 6.
