Saucy meatballs with veggies

While you’re busy with long summer afternoons let your oven do the work with this juicy meatball tray bake.


Ingredients

Meat ball Ingredients

  • 2 large kumara, scrubbed (not peeled) and chopped into bite size chunks

  • 500g lean beef mince

  • 1/2 C breadcrumbs

  • 1/4 C parmesan cheese, grated

  • Small bunch of parsley, chopped, keep the stalks

  • 1/2 tsp each salt, pepper, garlic powder, onion powder

  • 1 tsp basil

  • 1 egg

Tomato stock ingredients

  • 400g can of chopped tomatoes

  • 3 garlic cloves, crushed

  • Parsley stalks, finely chopped

  • 1 tsp dried oregano

  • 2 Tbsp olive oil

  • Salt and pepper to taste

  • 1 head of broccoli and 1 courgette, cut into bite sized pieces

Directions

Heat oven to 180C. Evenly space the kumara on a large roasting tray. Toss lightly with oil and season with salt and pepper. Combine the meatball ingredients and roll the mixture into bite sized balls. Arrange evenly between the kumara pieces. Combine the tomato sauce (except broccoli and courgette) ingredients and spoon over the meatballs and kumara. Roast for 30mins or until both meat and kumara is cooked through. Arrange vegetables amongst the kumara and meatballs and cook for a further 10-15mins. Serves 5-6.
