Simple salmon rocket and avocado salad

Ingredients

  • 3 or 4 handfuls of rocket leaves (enough for 2 people)

  • Smoked salmon (I bought the Pams vacuum packed pepper flavoured salmon, but you could buy any flavour.

  • 1 large tomato, sliced

  • Creamy Avocado Dressing. (See recipes)

  • Wedge of lemon to squeeze (optional)

  • Salt & pepper


Directions

Make the Creamy Avocado Dressing (refer to recipes). On a large plate (or small platter enough for 2) place the rocket leaves. Break the salmon into two pieces and place on rocket. Blob the dressing over the salad (as much as you like). Place a wedge of tomato on the dressing. Crack of salt & pepper to taste. Serves 2.
